And I think in the end he needs Usagi more than Seiya does. Seiya has some self-confidence of her own. But Mamoru, in spite of the arrogant facade he puts on, seems to demand perfection of himself, and when he feels he isn't strong enough (no matter how unfounded that assesment may be) he tears himself apart. Usagi believes in him and depends on him, and I think he needs that more than he lets on.
I think you're going have to make a difference between how either person regards Usagi before knowing she's a princess and afterwards. You say Mamoru is better because he puts her above his own life and limbs. That's after he got to know she is a princess. We all know he called her 'meatball head' and other things on a constant basis before he knew of her being a princess/senshi/etc.
Seiya on the other hand, only gets to find about about Usagi being a princess in one of the latter episodes of StarS, and his attitude towards her changes from that point as well.

But it's more important to Fighter to take revenge for Kakyuu, even though there is nothing to be gained from it and she knows she will probably die. (That she does not actually die in the end does not change the fact that she believed she would when she made the decision.) I'm not saying that Fighter and Kakyuu are necessarily lovers, but it's obvious whom Fighter's life is dedicated to. Seiya is to Kakyuu as Rei is to Usagi. I don't think it's very canon (as you pointed out yourself) to say that Seiya would be better with Kakyuu than with Usagi.
